Beet Carrot Celery Red Pepper and Tomato Juice

Beets are not my favorite veggies. At all. Not even close. Buuuut, if I juice ’em then they’re not so bad. And beets are actually very healthy for you. Beets are loaded with Vitamins A, B1, B2, B6 and C. Beets are also a great source of calcium, magnesium, copper, phosphorus and iron. Celery is full of Vitamins A, B and C with rich amounts of calcium and magnesium. The Red Pepper gives you high levels of Vitamin A, C and E. Not to mention other minerals such as potassium, manganese, thiamine, molybdenum, trytophan, copper, cobalt and zinc.

So in other words, this juice is super nutritious while tasting, well, rather tasty. The carrots and tomato help “sweeten” the juice. I only say sweeten because celery and pepper have a strong bitter flavor while beets taste earthy.  This makes one gigantic juice or 2 regular sized juices. I would opt for the two-fer.

1 Beet
3 Organic Carrots
3 Organic Celery Stalks
1/2 Organic Red Pepper
1 Tomato

Chop all these veggies up and toss them into your juicer. Enjoy!
