Raw Date Bar

Raw bars taste amazing while giving you the nutrients your body needs. The only problem is, they are expensive. So I’ve been trying out my own raw bar recipes. This is my first go-around and it turned out really good. Not that I’m bragging or any thing…

1 Cup Dates
1 Cup Almonds
1/4 Cup Raisins
1/2 Cup Dried Cranberries
1/2 Cup Shredded Coconut
1/2 Cup Raw Sun Flower Seeds
1/4 Cup Cashews
1/4 Cup Oats
2 TBS Raw Sesame Seeds
1/4 Cup Flax Meal (ground flax seeds)
1/4 Cup Chia Seeds
2 TBS Tahini
2 TBS Coconut Oil
1 TBS Cinnamon

It is a lot of ingredients, but this bad boy tastes so good, it’s worth the extra effort. First, soak the dates and almonds for about an hour to an hour and a half. Then toss them into the food processor and process away. Keep at it until it  turns into a slightly gooey mess. Please note that the almonds will still be quite chunky and that’s okay. Chunk is good. Then place the rest of the ingredients into a large bowl and mix it all together. Add the chunky almond and date blend to the bowl. Mix it altogether, I use a spoon at first and then my hands. Once everything is mixed smoosh it all into a glass pan. I used a 9 x 13 one. Press it all in there, cover up and let sit in your freezer for a few hours. I then move it to my fridge where it’s eaten in less than a 5 days.
