Healthy Egg Mess

Saying I love eggs doesn’t really express how much I, in truth, love them.  I eat them raw, hard boiled, scrambled, sunny side up — you name it.  Here is a simple and easy omelet-type healthy breakfast recipe.  It leaves me feeling full and with energy for the rest of my day.  This is a simple way to get some nutrients from veggies.  I’m too messy to actually make a perfect omelet so I just call this deliciousness my “egg mess.”

This makes enough for 2.

3 organic free range eggs
1/4 cup chopped onions
4 or 5 sliced mushrooms
1/2 chopped organic tomato
1/4 organic red pepper if a large one or half of a small sized one.  Chopped.
2 handfuls of raw organic spinach
3 organic free range eggs
1 tbsp of coconut oil

In large skillet add the coconut oil to a medium heat.  Let the oil melt.  Add in the onions first and let simmer a moment.  Toss in the mushrooms and then red peppers.  After the mushrooms look done throw in the spinach.  When everything looks done, like the spinach is all shriveled up, crack the eggs and lightly beat them in the skillet.  I prefer my eggs to be kinda runny, but cook them to your own personal preference.  During the whole time keep stirring so nothing sticks to the bottom of the pan or burns.  Once it’s all cooked serve on a plate and top with the tomatoes.  I like to add sour cream if I’m in the mood, but it’s not necessary.   And voila, you have egg mess!  If you like other veggies, add them.  Add more of the ones you like because you can’t go wrong with an egg mess 🙂
