It was my task to make cookies for a girls pajama party. You know the kind where you and your girlfriends lounge around in jammies and pig out on ice cream, cookies and cake. Like usual, I waited until the last minute to bake these bad boys. As I’m throwing in some ingredients I realized I was out of butter. Whoops! So I changed up my recipe and hoped for the best. When all was said and done, they tasted great!
Here you go:
2 1/4 Cups of all purpose flour
2 organic free range eggs
1 Cup Organic Extra Virgin Coconut Oil
3/4 Cup of natural raw sugar — I try to use the kind that’s less processed as possible
1/2 Cup shredded coconuts (Optional; I add this to make up for the less amount of sugar used for sweetness)
1 Tsp Baking Soda
1 Tsp Himalayan Crystal Salt
1 Tsp vanilla
1 Tsp Cinnamon
2 Cups of dark chocolate
Mix all together in whatever order you like. Bake at 375 degrees for around 12 minutes. Depending on how big your cookie dough balls are, times may very slightly. I check mine every 2 minutes after 9 minutes. Keep in mind that the actual cookie dough is on the crumbly side. But once baked it turns out fine. AND yummy. Yummy is always good 🙂
