Maple Banana Almond Bread

Here’s a recipe for sweet, moist, and delicious banana bread with a little crunch. This one is best I’ve done yet 🙂

1/3 cup organic butter melted
1/3 cup organic maple syrup at room temperature
2 organic eggs at room temperature
3 to 4 medium overripe bananas (~13 ounces peeled)
1 cup all-purpose flour
1/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped organic raw almonds

Preheat oven to 350 degrees. Use a fork to beat the melted butter with the maple syrup and eggs. Peel and mash the bananas in a separate bowl with a fork or potato masher. Stir the mashed bananas into the butter and syrup mixture. Add the flours, baking soda, salt, and baking soda and slowly stir into mixture so it is well integrated. Stir in the chopped nuts and pour into a greased 9×9 inch pyrex baking dish. Bake for 30 to 35 minutes depending on how done you like your banana bread.
