Natural Organic Peanut Butter Cookies

Peanuts have a bad rap for being high in fat.  This may be true BUT peanuts are also high in protein, Vitamin E and niacin.  And honestly, PB is delicious.  The organic, free of added sugar and salt kind, that is.  Look on the back of PB jar labels and you’ll see.  Don’t you just want good ol’ fashioned peanut butter to be just that; Peanut Butter? Sorry, I’m getting off track, we’re here to talk about Peanut Butter Cookies, not me preaching debating on the more healthier form of PB.

I’m on a quest.  I want to bake the best damn Peanut Butter Cookies in the world.  No, make the the UNIVERSE. So here is my first attempt at greatness…

1 Cup of Organic Peanut Butter
1 Cup of flour — I used All Purpose.
1 Egg — I use the organic free range eggs.  They tend to be larger.  And healthier, obvs.
1 Stick of butter — Butter is not the best for you especially when cooked BUT these are cookies people!  Some of my
other future recipes will be butter free and more on the vegan side.
3/4 cup raw sugar  — I do NOT use brown sugar, ever.  I try to use the lesser of evils with raw sugar cane sugar.
Simply out, it’s less processed.  And anything less processed is better for your body.
1/2 tsp of baking soda

Dump everything into a mixing bowl and mix away!  Bake for 10 min at 350.  I baked for 5 minutes and then I took the cookies out to do that cris cross thingy you see on PB cookies.

I liked these cookies; pretty good for a first timer.  Very peanut buttery and thick and smooth.  They went perfect with milk.  Mmmmm.
