Vegan Cranberry Almond Muffins

I’ve been on a chia seed kick lately. Chia Seeds are an easy way to add some good proteins, healthy omega-3 fatty acids as well as other minerals. You can literally add some chia seeds to any thing without an overpowering taste. I like it because it adds a little crunch to things. To rad more about the benefits of chia seeds, click here.

This is a pretty easy and quick muffin mix to whip up. And it’s vegan 🙂

2 Cups All Purpose Flour
1/4 Cup Raw Sugar
1 Cup Almonds – chopped
2 Tsp Baking Powder
1 Tsp Baking Soda
2 Tsp Chia Seeds
1 Cup Cranberries – FROZEN and chopped
1/3 Cup Coconut Oil
2 Oranges freshly squeezed
1/2 Cup H2O

Mix all the dry together and then the wet stuff. Add the cranberries at the end just before you pop it in the oven. Cook the muffins at 350 degrees for 20 minutes. This makes 6 large muffins or 12 regular sized ones. I make the large muffins so if you make the small ones, be sure to bake them less than 20 minutes and check on them after 12.
