So refreshing and so healthy! This juice is an excellent source of vitamins and minerals to jump start your day or as a pick-me-up afternoon snack.

2 Tomatoes
4 Carrots
3 Celery Stalks
1 Yellow Pepper – any color will do, I just happen to have yellow
Handful of Spinach
2 Handfuls of Kale

Toss this all into your juicer and you’re good to go. This makes 2 juices, so you can share. Or not…

As for what type of juicer I use: I use the Omega 8006 and it’s a bad ass. Seriously.

Beet Carrot Tomato Cucumber and Pepper Juice

Here is a quick and simple juicing recipe that’s a little on the sweet side. So if you’re not a fan of beets like me, then I would for sure try this one out.

2 Beets
4 Medium sized Carrots
1 Cucumber
2 Tomatoes
1/2 Orange Pepper

I would use all of the pepper but my mangy mutt loooooves them so much that I simply must share.

Beets are not my favorite veggies. At all. Not even close. Buuuut, if I juice ’em then they’re not so bad. And beets are actually very healthy for you. Beets are loaded with Vitamins A, B1, B2, B6 and C. Beets are also a great source of calcium, magnesium, copper, phosphorus and iron. Celery is full of Vitamins A, B and C with rich amounts of calcium and magnesium. The Red Pepper gives you high levels of Vitamin A, C and E. Not to mention other minerals such as potassium, manganese, thiamine, molybdenum, trytophan, copper, cobalt and zinc.

2 Beefsteak Tomatoes
3 Carrots
3 Celery Stalks
1 Beet
1 Cucumber
1 Broccoli Stalk

Chop these veggies up on drop it into your juicer. I’ve had my juicer for a little over a year now and it is still going strong for as often as I use it. I heart my Omega 8006 big time. It was under $200, which is a lot of money, buuuut, when you use use at least once a week or more, the price per use is SO small.

Pop into juicer and done.

This juice is packed full of vitamins and minerals with a sweet and earthy taste. Beets are very earthy tasting but the carrots and tomato make it a little sweeter. Makes one big juice or two medium sized ones.

I’m not a huge fan of broccoli stalks, I like the tops but the stalks, just, no way jose. So I try and toss them into a juice. And then cover it up in a juice with loads of other more pleasing flavors.

4 Carrots
1/2 Broccoli stalk
1 Cucumber
1 Tomato
Ginger nubin’
Just a squeeze or 2 of lime

I chop up all the ingredients and toss it into my Omega 8006 Juicer. For the lime, I simply cut a wedge off and squeeze it into my juice at the end. Oh, the labor!

Polenta with Meat Sauce

In the winter sometimes there’s nothing like a hearty warm dinner dish that fills your belly and then some. Here’s my Polenta recipe with a meat sauce on top. The Polenta itself is a vegan/vegetarian dish, however when I add my meat sauce on top, not so much. And the whole recipe is gluten-free. Yah!

Polenta —

4 1/2 Cups H2O
1 1/2 Tsp of Himalayan Crystal Salt
1 1/3 Cups of Cornmeal
3 Tbsp of Organic Extra Virgin, Cold Pressed Olive Oil

Quick and Easy Pizza Sauce

My family and I make it a night when we make and bake our own pizzas.  Here’s a simple and super quick delicious pizza sauce recipe.  Seriously, it takes no time at all and there is enough to freeze half for next time!

2 Cans of Tomato Paste
1 Box of Pomi Chopped Tomatoes or roughly 26 oz of other chopped tomotoes
1 TBSP of Basil
1 TBSP or Oregano
1/2 TSP Ground Thyme
1/2 TSP Himalayan Crystal Salt
