Peanut Butter Banana Spinach Smoothie

Don’t let the title fool you, this smoothie tastes AWESOME. And it has a power punch of good fats, plenty of vitamins and minerals, and it gives you energy lasting throughout the day. I particularly love drinking this smoothie after a long jog with my mutt, but my girlfriend likes to drink it for breakfast.

1 Banana
1 Cup Organic Milk  (I use raw milk– so creamy!)
Handful of Organic Spinach
Handful of ice
Teaspoon of Organic Peanut Butter

So refreshing and so healthy! This juice is an excellent source of vitamins and minerals to jump start your day or as a pick-me-up afternoon snack.

2 Tomatoes
4 Carrots
3 Celery Stalks
1 Yellow Pepper – any color will do, I just happen to have yellow
Handful of Spinach
2 Handfuls of Kale

Toss this all into your juicer and you’re good to go. This makes 2 juices, so you can share. Or not…

As for what type of juicer I use: I use the Omega 8006 and it’s a bad ass. Seriously.

For Salmon:

1 wild caught salmon fillet ~1 pound
1.5 Tbsp Dijon mustard
1 Tbsp honey
½ tsp caraway seeds crushed
1/2 teaspoon rice vinegar
¼ teaspoon pepper

For Cous Cous:

3 cups vegetable broth
2 Tbsp butter
1.5 cups cous cous
1 Tbsp organic coconut oil
1 white onion chopped
1 organic red, yellow, or orange pepper cut up
2-3 large handfuls of baby spinach
¾ Himalayan Sea Salt

I like spinach. Like, a lot. However, I only like to eat spinach, not drink it. So I decided to pair it with some sweet apples to help me forget I was drinking green nast. Vaca Juice – Celery Carrots Tomatoes Spinach and Lime Juice

What makes this my Vaca Juice? Just that there’s a little hint of lime in it makes me feel like I’ve been whisked away and I’m laying on a beach, NOT sippin’ on Pina Coladas, but a much healthier, lighter veggie juice.

4 Celery Stalks, I get really large ones so feel free to use more if you have smaller ones
3 Medium Carrots
2 Tomatoes
Handful of spinach

Chicken and Veggie Quesadillas

I’ve always liked quesadillas so I tried to make them myself. Holy Cow man, are these babies good. They’re fully jacked up with lots of veggies and shredded chicken that I can barely eat a full one.

Throw some chicken in a crock pot and let it do its thing for about 5 hours. I usually put a whole pound in there and have leftovers because this recipe calls for 6 oz. You can use more, it’ll just be meaty 🙂

Saying I love eggs doesn’t really express how much I, in truth, love them.  I eat them raw, hard boiled, scrambled, sunny side up — you name it.  Here is a simple and easy omelet-type healthy breakfast recipe.  It leaves me feeling full and with energy for the rest of my day.  This is a simple way to get some nutrients from veggies.  I’m too messy to actually make a perfect omelet so I just call this deliciousness my “egg mess.”

This makes enough for 2.

Hearts of Palm Salad Recipe with Arugula, Spinach, Radicchio, and Lime Dressing

2.5 ounces organic baby arugula
2.5 ounces organic baby spinach
5 ounces organic radicchio shredded
1.5 ounces grated  cheese
2 Tbsp fresh lime juice
2 tsp organic sugar
½ tsp organic shoyu (naturally brewed soy sauce)
1/8 tsp ground black pepper
6 Tbsp organic olive oil
1 can (14 ounces) hearts of palm in pieces

Man, oh man, I seriously can’t get over my juicer.  I simply love love love creating my own juices.  This one is full of veggies AND it tastes awesome.  This vegetable blend contains Vitamins A, B, C, D, E and K followed by Potassium, Iron, Folic Acid, Antioxidants, Magnesium, Manganese, Phosphorus, you get the point?  Good.  On to the recipe then!
