Raw Chocolate Brownies with Icing

Mmmm, raw brownies are the BEST. This particular raw / vegan recipes are for my friends:

The actual brownie:
1 Cup Pecans
1 Cup Dates (Pitted)
4 TBS of Shredded Coconut
4 TBS of Organic Cocoa Powder
2 TBS Cocoa Nibs  — the Cocoa Nibs are not necessary but I like the added crunch 🙂
1 TBS Agave Syrup
Pinch of Sea Salt

Raw bars taste amazing while giving you the nutrients your body needs. The only problem is, they are expensive. So I’ve been trying out my own raw bar recipes. This is my first go-around and it turned out really good. Not that I’m bragging or any thing…

I ran in the Door County Half Marathon a few weeks ago and the morning of the race I picked up my bag o’ goodies supplied by the race sponsors. Gluten Free Creamy Cucumber Salad Recipe

This dish makes a great snack stored in the fridge or a delicious side.

4 medium seedless cucumbers (just over 3 pounds)
1 Tbsp salt

Dressing:
1/4 red wine vinegar
1 Tbsp water
2 Tbsp sugar
1/3 cup organic extra virgin cold pressed olive oil
1/2 cup sour cream (make sure it’s the full fat kind for gluten free and, AND not the Borden’s brand!!)
