Tomato Carrot Celery Spinach Kale and Pepper Juice

Posted by on Friday, 11 May, 2012

So refreshing and so healthy! This juice is an excellent source of vitamins and minerals to jump start your day or as a pick-me-up afternoon snack.

2 Tomatoes
4 Carrots
3 Celery Stalks
1 Yellow Pepper – any color will do, I just happen to have yellow
Handful of Spinach
2 Handfuls of Kale

Toss this all into your juicer and you’re good to go. This makes 2 juices, so you can share. Or not…

As for what type of juicer I use: I use the Omega 8006 and it’s a bad ass. Seriously.

Sweet Earthy Juice

Posted by on Sunday, 4 March, 2012

This simple and easy juicing recipe only has 4 veggies but it sure packs a punch for vitamins and minerals.

1 Beet ( or 2 if small )
4 Organic Carrots
4 Organic Celery Stalks
1 Organic Yellow Pepper

Slice up and juice away! While the carrots and pepper add sweetness to this juice the celery and beets certainly counteract that in the after taste. This juice is still pretty good, and it gives my body the nutrients it needs to keep me going.

Beet Carrot Celery Red Pepper and Tomato Juice

Posted by on Saturday, 22 October, 2011

Beets are not my favorite veggies. At all. Not even close. Buuuut, if I juice ’em then they’re not so bad. And beets are actually very healthy for you. Beets are loaded with Vitamins A, B1, B2, B6 and C. Beets are also a great source of calcium, magnesium, copper, phosphorus and iron. Celery is full of Vitamins A, B and C with rich amounts of calcium and magnesium. The Red Pepper gives you high levels of Vitamin A, C and E. Not to mention other minerals such as potassium, manganese, thiamine, molybdenum, trytophan, copper, cobalt and zinc.

Vegetable Panang Curry with Beef

Posted by on Monday, 31 January, 2011

Curry is an essential during the winter months in Wisconsin.  This one I made up is sure to warm you and fill your tummy at the same time.  I usually use whatever veggies I have laying around and the same goes with meat. If you have fresh thai basil or lime leaves be sure to add it, but even this basic combo tastes excellent. This recipe is spicy, but not overwhelmingly so and I love that you can taste the flavor of each vegetable. I’ve tried this dish wish shrimp and chicken before and to be honest, they are all … Read the rest

Thai Inspired Chicken with Summer Vegetables

Posted by on Sunday, 27 June, 2010

The most time consuming part of this recipe is slicing the chicken, but it goes pretty quick if you use a sharp knife. This is one of my favorite things to make in the summer because it is light, relatively easy, and surprisingly flavorful. I would have to say it does not smell the best while cooking, but don’t let that deter you.

1 Tbsp coconut oil
1/2 large white onion roughly chopped
1 red, yellow, or orange pepper cut in chunks
2 Tbsp raw sugar
4 Tbsp high quality fish sauce
1.5 to 2 pounds chicken sliced in bite … Read the rest
