In my opinion this recipe is pretty delicious. The only sweetness comes from the squash and it is a very thick puree (probably not unlike baby food). If you like your soup thinner you may want to add more vegetable broth. This recipe makes approximately 5 quarts and is easy to make a ahead for a dinner party and reheat. Polenta with Meat Sauce

In the winter sometimes there’s nothing like a hearty warm dinner dish that fills your belly and then some. Here’s my Polenta recipe with a meat sauce on top. The Polenta itself is a vegan/vegetarian dish, however when I add my meat sauce on top, not so much. And the whole recipe is gluten-free. Yah!

Polenta —

4 1/2 Cups H2O
1 1/2 Tsp of Himalayan Crystal Salt
1 1/3 Cups of Cornmeal
3 Tbsp of Organic Extra Virgin, Cold Pressed Olive Oil

Hungry Hippo Hearty Chili Recipe

It’s that time of the year again when eating homemade Chili becomes my job.  Here’s an awesome recipe that always fills up my belly and leaves me plenty for leftovers. It’s a super meaty and thick recipe, not of the soupy variety.

1 Large Onion Roughly Chopped
4 Pounds of Ground Meat
1 Tsp Garlic Powder
1 Tsp Red Pepper Flakes
1 Tsp Black Pepper
3 Tsp Himalayan Crystal Salt
1/4 Cup Cumin
1/4 Cup Chili Powder
1.5 Cups Frozen Corn
1 Can Pinto Beans strained and rinsed
1 Can Black Beans strained and rinsed
