Peanut Butter Banana Spinach Smoothie

Don’t let the title fool you, this smoothie tastes AWESOME. And it has a power punch of good fats, plenty of vitamins and minerals, and it gives you energy lasting throughout the day. I particularly love drinking this smoothie after a long jog with my mutt, but my girlfriend likes to drink it for breakfast.

1 Banana
1 Cup Organic Milk  (I use raw milk– so creamy!)

Raw Chocolate Brownies with Icing

Mmmm, raw brownies are the BEST. This particular raw / vegan recipes are for my friends:

The actual brownie:
1 Cup Pecans
1 Cup Dates (Pitted)
4 TBS of Shredded Coconut
4 TBS of Organic Cocoa Powder
2 TBS Cocoa Nibs  — the Cocoa Nibs are not necessary but I like the added crunch 🙂
1 TBS Agave Syrup
Pinch of Sea Salt

Have too much zucchini from your garden? Here’s a delicious recipe that, in my opinion, tastes better than the noodle version. For those of you that can’t have gluten, it’s a perfect alternative.

2 to 4 zucchini (about 2 pounds) room temperature
2 Tablespoons of organic coconut oil warmed to liquid
1 teaspoon sea salt divided
¾ teaspoon ground black pepper divided
1 pound ground beef
2 cups spaghetti sauce
16 ounces quality ricotta cheese

Maple Banana Almond Bread

Here’s a recipe for sweet, moist, and delicious banana bread with a little crunch. This one is best I’ve done yet 🙂

1/3 cup organic butter melted
1/3 cup organic maple syrup at room temperature
2 organic eggs at room temperature
3 to 4 medium overripe bananas (~13 ounces peeled)
1 cup all-purpose flour
1/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
