Thai Inspired Cabbage Salad with Ground Chicken and Peanuts

1 pound ground chicken
1.5 cups finely chopped peanuts
8 cups shredded cabbage (~1 medium cabbage)
1 cup shredded carrot

For the Dressing
1/4 cup and 2 Tbsp freshly squeezed lime juice (1-3 limes depending how big and juicy they are)
6 Tbsp fish sauce
5 tsp raw sugar
1/4 cup and 2 Tbsp water
8 thai chili peppers seeded and minced

Jumbo Prawns Pasta with Feta Tomato and Artichokes

This recipe is easy, quick, and delicious and very, very similar to this one. The really only difference is that we used shrimp instead of scallops and maybe slightly more cheese.

1 Tbsp butter
1 pound jumbo prawns
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp pepper
1 box (9 oz) frozen artichokes thawed

Polenta with Meat Sauce

In the winter sometimes there’s nothing like a hearty warm dinner dish that fills your belly and then some. Here’s my Polenta recipe with a meat sauce on top. The Polenta itself is a vegan/vegetarian dish, however when I add my meat sauce on top, not so much. And the whole recipe is gluten-free. Yah!

Polenta —

4 1/2 Cups H2O
1 1/2 Tsp of Himalayan Crystal Salt
1 1/3 Cups of Cornmeal

Gallo Pinto, Black Beans and Rice

8 oz dried organic black beans
10 cups water
1 Tbsp Salsa Lizano or Worcestershire — you can find vegan brands if you’d like 🙂
1 Tbsp organic cold pressed coconut oil
1 small white onion diced
1 small green pepper
1 small red pepper
1/2 cup white rice
1 tsp salt
1/4 tsp ground pepper

Chicken and Veggie Quesadillas

I’ve always liked quesadillas so I tried to make them myself. Holy Cow man, are these babies good. They’re fully jacked up with lots of veggies and shredded chicken that I can barely eat a full one.

Throw some chicken in a crock pot and let it do its thing for about 5 hours. I usually put a whole pound in there and have leftovers because this recipe calls for 6 oz. You can use more, it’ll just be meaty 🙂

Spicy Beef Sloppy Joes

Sometimes there is nothing better than a super messy Sloppy Joe to satisfy your hunger.  Here is a pretty quick and easy delicious recipe —

2 lbs Ground Beef
1 Cup Beer — try to make it room temp and we just use what we have in the house
1 Green Pepper roughly chopped
1/4 Cup Onion roughly chopped
2 Tbsp Chili Powder
1 Tbsp Worchestire Sauce
1 Cup Ketchup

Chicken Marsala Dinner Dish

Chicken Marsala always surprises me with how tasty it is.  I know I like this particular dish, but still, every time I cook this and take my first bite I wonder why I don’t make this more often.  So, here you go!

1 Pound Chicken
6 Tbsp all purpose flour
1 Tsp Himalayan Crystal Salt
1/4 Tsp Pepper
