I had some random items sitting in my fridge that I needed to use up or they would go bad. That’s one of the benefits of juicing. Yes, I like having all these wonderful nutrients in a pint glass form, but it also comes in handy when you neglect your fruits and veggies for a while too.

4 Apples
3 Handfuls of Swiss Chard
4 Tall Celery stalks

Mmmm, raw brownies are the BEST. This particular raw / vegan recipes are for my friends:

The actual brownie:
1 Cup Pecans
1 Cup Dates (Pitted)
4 TBS of Shredded Coconut
4 TBS of Organic Cocoa Powder
2 TBS Cocoa Nibs  — the Cocoa Nibs are not necessary but I like the added crunch 🙂
1 TBS Agave Syrup
Pinch of Sea Salt

Authentic Italian Tiramisu

Tiramisu is one of my favorite desserts, but it can be hard to find an authentic tiramisu at restaurants, and not all recipes are created equal. This recipe has just the right amount of sweetness and tastes delicious with the coffee soaked ladyfingers. I usually use packages of ladyfingers from the deli, but not everywhere carries them. If you can’t find ladyfingers I have used different types of shortbread cookies with success, but you might need to more coffee.

Have too much zucchini from your garden? Here’s a delicious recipe that, in my opinion, tastes better than the noodle version. For those of you that can’t have gluten, it’s a perfect alternative.

2 to 4 zucchini (about 2 pounds) room temperature
2 Tablespoons of organic coconut oil warmed to liquid
1 teaspoon sea salt divided
¾ teaspoon ground black pepper divided
1 pound ground beef

Maple Banana Almond Bread

Here’s a recipe for sweet, moist, and delicious banana bread with a little crunch. This one is best I’ve done yet 🙂

1/3 cup organic butter melted
1/3 cup organic maple syrup at room temperature
2 organic eggs at room temperature
3 to 4 medium overripe bananas (~13 ounces peeled)
1 cup all-purpose flour
1/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder

3 ounces of blackberries
1 cup yogurt
¼ cup almond butter
2 Tbsp dark chocolate
2 Tbsp whole milk
