Curry is an essential during the winter months in Wisconsin.  This one I made up is sure to warm you and fill your tummy at the same time.  I usually use whatever veggies I have laying around and the same goes with meat. If you have fresh thai basil or lime leaves be sure to add it, but even this basic combo tastes excellent. Thick Hearty Turkey Vegetable Soup

What to do with all those Turkey day leftovers??  Well, I like to make a hearty turkey soup.  I’m not a huge fan of the liquid part so I make mine super thick with turkey, carrots, celery… you get the picture.

48 Oz. of Vegetable Broth
4 Cups H20
2 Bay Leaves
3 – 4 Large Carrots — Roughly a pound
1 Onion
3 Celery Stalks
8 Oz. of Egg Noodles
2 TBSP of Oregano
3/4 TSP of Pepper
3/4 TSP of Himalyan Crystal Salt
8 Oz. Mushrooms

Quick and Easy Chicken Marsala Dinner

Chicken Marsala always surprises me with how tasty it is.  I know I like this particular dish, but still, every time I cook this and take my first bite I wonder why I don’t make this more often.  So, here you go!

1 Pound Chicken
6 Tbsp all purpose flour
1 Tsp Himalayan Crystal Salt
1/4 Tsp Pepper

Mix these ingredients together and completely cover the chicken on all sides.  Brown the chicken on med-high heat on your stove top and when cooked put in oven on low heat (to keep warm).  Then –

Quick and Easy Pizza Sauce

My family and I make it a night when we make and bake our own pizzas.  Here’s a simple and super quick delicious pizza sauce recipe.  Seriously, it takes no time at all and there is enough to freeze half for next time!

2 Cans of Tomato Paste
1 Box of Pomi Chopped Tomatoes or roughly 26 oz of other chopped tomotoes
1 TBSP of Basil
1 TBSP or Oregano
1/2 TSP Ground Thyme
1/2 TSP Himalayan Crystal Salt

Hungry Hippo Thick Chili and Beans Recipe

It’s that time of the year again when eating homemade Chili becomes my job.  Here’s an awesome recipe that always fills up my belly and leaves me plenty for leftovers. It’s a super meaty and thick recipe, not of the soupy variety.

1 Large Onion Roughly Chopped
4 Pounds of Ground Meat
1 Tsp Garlic Powder
1 Tsp Red Pepper Flakes
1 Tsp Black Pepper
3 Tsp Himalayan Crystal Salt
1/4 Cup Cumin
1/4 Cup Chili Powder
1.5 Cups Frozen Corn
1 Can Pinto Beans strained and rinsed
1 Can Black Beans strained and rinsed

Saying I love eggs doesn’t really express how much I, in truth, love them.  I eat them raw, hard boiled, scrambled, sunny side up — you name it.  Here is a simple and easy omelet-type healthy breakfast recipe.  It leaves me feeling full and with energy for the rest of my day.  This is a simple way to get some nutrients from veggies.  I’m too messy to actually make a perfect omelet so I just call this deliciousness my “egg mess.”

This makes enough for 2.

Pot Roast Recipe with Carrots, Potatoes, and Squash

¼ Cup flour
¾ tsp Himalayan sea salt
¼ tsp pepper
1 Tbsp organic coconut oil
3 pound organic grass fed rump roast
1 large onion sliced
4 organic carrots washed and cut into chunks
1 Cup organic red wine
3 Tbsp fresh parsley chopped divided
