Vegan Chocolate Chip Cookies

I wanted to try out a vegan recipe for chocolate chip cookies. I am not vegan, but I do have a lot of vegan friends so I thought what the hell, why not. It’s my first attempt at a vegan recipe but I think the cookies turned out really, really well. They’re soft in the middle too. Also, I used H2O to help moisten the dough up, but if you feel like you need to add more I suggest adding very little each time so not top make it soup like :)

Chocolate Cookies - Butter Free

It was my task to make cookies for a girls pajama party.  You know the kind where you and your girlfriends lounge around in jammies and pig out on ice cream, cookies and cake.  Like usual, I waited until the last minute to bake these bad boys.  As I’m throwing in some ingredients I realized I was out of butter.   Whoops!  So I changed up my recipe and hoped for the best.  When all was said and done, they tasted great!

I know I said I’m on a mission to find the best Peanut Butter Cookie recipe BUT, so what if I make a couple pit stops with other types of cookies along the way.  Maybe I just need to cleanse my palate, if you will.  On to yummy Oatmeal Cookies!!

Peanuts have a bad rap for being high in fat.  This may be true BUT peanuts are also high in protein, Vitamin E and niacin.  And honestly, PB is delicious.  The organic, free of added sugar and salt kind, that is.  Look on the back of PB jar labels and you’ll see.  Don’t you just want good ol’ fashioned peanut butter to be just that; Peanut Butter? Melted Ice Cream Dessert with Almond Crumble

Fresh vanilla bean really makes this dessert, that fresh vanilla taste is what gives it the flavor of melted ice cream, however it is not soupy like ice cream. Instead it has the consistency of a stiff mousse. Try it and you’ll know what I mean. Serve in small scoops with this almond crumble topping. Grinding the almonds is really a breeze and takes only a couple of minutes if you have the right equipment.
