Posted by on Friday, 7 September, 2012

Mmmm, raw brownies are the BEST. This particular raw / vegan recipes are for my friends:

The actual brownie:
1 Cup Pecans
1 Cup Dates (Pitted)
4 TBS of Shredded Coconut
4 TBS of Organic Cocoa Powder
2 TBS Cocoa Nibs  — the Cocoa Nibs are not necessary but I like the added crunch 🙂
1 TBS Agave Syrup
Pinch of Sea Salt

Toss all of the above into your food processor and whip away. It will be a little crumbly, don’t worry. If you find it too crumbly, add a little bit of Coconut Oil, or more agave syrup … Read the rest

Authentic Italian Tiramisu

Posted by on Wednesday, 5 September, 2012

Tiramisu is one of my favorite desserts, but it can be hard to find an authentic tiramisu at restaurants, and not all recipes are created equal. This recipe has just the right amount of sweetness and tastes delicious with the coffee soaked ladyfingers. I usually use packages of ladyfingers from the deli, but not everywhere carries them. If you can’t find ladyfingers I have used different types of shortbread cookies with success, but you might need to more coffee.

2 packages Italian ladyfingers
2 1/4 ounces of espresso
1 ounce of chopped dark chocolate divided
6 egg yolks

Vegan Chocolate Chip and Agave Cookies

Posted by on Wednesday, 18 July, 2012

This vegan cookie recipe is very close to another vegan cookie recipe, BUT for several ingredients which make these vegan delights softer!

2 Tsp Baking Powder
Pinch o’ Salt — I use Himalayan Crystal Salt
2 Tsp Cinnamon
1/2 Cup Coconut Oil
3/4 Cup H2O

1 Cup Chocolate Chips — make sure it’s dark chocolate to remain vegan
1/2 Cup Cacao Nibs (optional, I like ‘em for that added crunch)

I mixed everything up in that order in a … Read the rest

Vegan Chocolate Chip Cookies

Posted by on Tuesday, 19 April, 2011

I wanted to try out a vegan recipe for chocolate chip cookies. I am not vegan, but I do have a lot of vegan friends so I thought what the hell, why not. It’s my first attempt at a vegan recipe but I think the cookies turned out really, really well. They’re soft in the middle too. Also, I used H2O to help moisten the dough up, but if you feel like you need to add more I suggest adding very little each time so not top make it soup like 🙂

2 Cups Flour
2 Tsp Baking Powder

Chocolate Chip Cookies — Butter Free

Posted by on Sunday, 28 November, 2010

It was my task to make cookies for a girls pajama party.  You know the kind where you and your girlfriends lounge around in jammies and pig out on ice cream, cookies and cake.  Like usual, I waited until the last minute to bake these bad boys.  As I’m throwing in some ingredients I realized I was out of butter.   Whoops!  So I changed up my recipe and hoped for the best.  When all was said and done, they tasted great!

Here you go:

2 1/4 Cups of all purpose flour
2 organic free range eggs
1 Cup Organic Extra Read the rest

Organic Oatmeal and Chocolate Cookies

Posted by on Thursday, 1 July, 2010

I know I said I’m on a mission to find the best Peanut Butter Cookie recipe BUT, so what if I make a couple pit stops with other types of cookies along the way.  Maybe I just need to cleanse my palate, if you will.  On to yummy Oatmeal Cookies!!

I tried to make them somewhat healthy.  Okay, perhaps “healthy” is a bit of a stretch for cookies, but I tried.  Here goes nothin’…

2 1/2 Cups of organic quick or old fashioned oats, uncooked.
3/4 cup of organic wheat bran
1 cup organic raw sugar  — As I’ve stated … Read the rest

Natural Organic Peanut Butter Cookies

Posted by on Wednesday, 23 June, 2010

Peanuts have a bad rap for being high in fat.  This may be true BUT peanuts are also high in protein, Vitamin E and niacin.  And honestly, PB is delicious.  The organic, free of added sugar and salt kind, that is.  Look on the back of PB jar labels and you’ll see.  Don’t you just want good ol’ fashioned peanut butter to be just that; Peanut Butter? Sorry, I’m getting off track, we’re here to talk about Peanut Butter Cookies, not me preaching debating on the more healthier form of PB.

I’m on a quest.  I want to bake the … Read the rest

Melted Ice Cream Dessert with Almond Honey Crumble Recipe

Posted by on Sunday, 23 May, 2010

Fresh vanilla bean really makes this dessert, that fresh vanilla taste is what gives it the flavor of melted ice cream, however it is not soupy like ice cream. Instead it has the consistency of a stiff mousse. Try it and you’ll know what I mean. Serve in small scoops with this almond crumble topping. Grinding the almonds is really a breeze and takes only a couple of minutes if you have the right equipment.
