Beets are not my favorite veggies. At all. Not even close. Buuuut, if I juice ‘em then they’re not so bad. And beets are actually very healthy for you. Beets are loaded with Vitamins A, B1, B2, B6 and C. Beets are also a great source of calcium, magnesium, copper, phosphorus and iron. Celery is full of Vitamins A, B and C with rich amounts of calcium and magnesium. The Red Pepper gives you high levels of Vitamin A, C and E. I’m not a huge fan of broccoli stalks, I like the tops but the stalks, just, no way jose. So I try and toss them into a juice. And then cover it up in a juice with loads of other more pleasing flavors.

4 Carrots
1/2 Broccoli stalk
1 Cucumber
1 Tomato
Ginger nubin’
Just a squeeze or 2 of lime

Brussels Sprouts are a great source of vitamins and minerals. This recipe calls for steamed Brussels Sprouts that are marinated. The marinade is mild and gives them a little bit of flavor. It’s a great crunchy snack, appetizer, or side to a meal.  Definitely a good and healthy alternative to chips.

2 pounds fresh Brussels Sprouts
1/2 cup organic cold pressed olive oil
1/4 cup red wine vinegar
2 teaspoons dijon mustard
1 teaspoon honey
1 teaspoon himalayan sea salt

What makes this my Vaca Juice? Just that there’s a little hint of lime in it makes me feel like I’ve been whisked away and I’m laying on a beach, NOT sippin’ on Pina Coladas, but a much healthier, lighter veggie juice.

4 Celery Stalks, I get really large ones so feel free to use more if you have smaller ones
3 Medium Carrots
2 Tomatoes
Handful of spinach
Squeeze of fresh lime — add as much or as little as you like. Start small and taste test!

8 oz dried organic black beans
10 cups water
1 Tbsp Salsa Lizano or Worcestershire — you can find vegan brands if you’d like :)
1 Tbsp organic cold pressed coconut oil
1 small white onion diced
1 small green pepper
1 small red pepper
1/2 cup white rice
1 tsp salt
1/4 tsp ground pepper

1/2 cup reserved cooking liquid from beans
