Vegan and Gluten-free Marinated Brussels Sprout Snacks

Brussels Sprouts are a great source of vitamins and minerals. This recipe calls for steamed Brussels Sprouts that are marinated. The marinade is mild and gives them a little bit of flavor. It’s a great crunchy snack, appetizer, or side to a meal.ย  Definitely a good and healthy alternative to chips.

2 pounds fresh Brussels Sprouts
1/2 cup organic cold pressed olive oil
1/4 cup red wine vinegar
2 teaspoons dijon mustard
1 teaspoon honey

Vegan Chocolate Chip Cookies

I wanted to try out a vegan recipe for chocolate chip cookies. I am not vegan, but I do have a lot of vegan friends so I thought what the hell, why not. It’s my first attempt at a vegan recipe but I think the cookies turned out really, really well. They’re soft in the middle too. Also, I used H2O to help moisten the dough up, but if you feel like you need to add more I suggest adding very little each time so not top make it soup like ๐Ÿ™‚

Polenta with Meat Sauce

In the winter sometimes there’s nothing like a hearty warm dinner dish that fills your belly and then some. Here’s my Polenta recipe with a meat sauce on top. The Polenta itself is a vegan/vegetarian dish, however when I add my meat sauce on top, not so much. And the whole recipe is gluten-free. Yah!

4 1/2 Cups H2O
1 1/2 Tsp of Himalayan Crystal Salt

Apple Celery Carrot and Ginger Juice

Nothing seems to quench my thirst quite like a nutritious juice.ย  I used organic apples, organic celery, organic carrots and a nubbin’ of ginger. Tossed them all in my 8006 Omega juicer and the result was a tasty slightly sweet power packed juice for two.

Vaca Juice – Celery Carrots Tomatoes Spinach and Lime Juice

What makes this my Vaca Juice? Just that there’s a little hint of lime in it makes me feel like I’ve been whisked away and I’m laying on a beach, NOT sippin’ on Pina Coladas, but a much healthier, lighter veggie juice.

4 Celery Stalks, I get really large ones so feel free to use more if you have smaller ones
3 Medium Carrots
2 Tomatoes

8 oz dried organic black beans
10 cups water
1 Tbsp Salsa Lizano or Worcestershire — you can find vegan brands if you’d like ๐Ÿ™‚
1 Tbsp organic cold pressed coconut oil
1 small white onion diced
1 small green pepper
1 small red pepper
1/2 cup white rice

Gluten-Free Cranberry Banana Strawberry Orange Smoothie

1 Cup Cranberries — fresh or frozen
5 Strawberries — fresh or frozen
1 Banana
1 Orange
1 Cup of yogurt — I like the vanilla kind but for a gluten-free yogurt, stick to the plain.

Toss all this stuff in your blender and let ‘er rip! If everything you’re using is fresh and not frozen then serve over ice. This makes 2 servings or one really REALLY big one ๐Ÿ™‚

Gluten Free Creamy Cucumber Salad Recipe

This dish makes a great snack stored in the fridge or a delicious side.

4 medium seedless cucumbers (just over 3 pounds)
1 Tbsp salt

Dressing:
1/4 red wine vinegar
1 Tbsp water
2 Tbsp sugar
1/3 cup organic extra virgin cold pressed olive oil

Natural Homemade Mayo (Japanese Inspired)

I like mayo but I don’t like all the funky junk that’s put in there so I searched far and wide on how to make my own. I came up with this version, which I like better than the traditional recipe. This version is less gelatinous and has a different (and I think better) flavor than the standard recipe. I use it whenever a recipe calls for mayo and as a base for other sauces and dressings. One thing about making your own mayo at home, it seems to work best with a good food processor.

Pineapple Blueberry Orange Smoothie

This smoothie tastes great and I put in some raw egg for added protein. You, of course, can leave that out, it’s just something I like to do. Also, I only use organic farm raised eggs. I’m lucky enough to have an egg lady that I can get fresh ones from but you can also find organic farm raised brands in the supermarket. I know Milos Organic Eggs are a good one to use.
