A Healthy Snack; Tomato and Mozzarella Cheese
I love this little snack. In Italy it’s known as insalata caprese, and is great just about anytime. It’s quick to make and I love, love, love cheese. Oh yeah, and tomatoes are good for you too
A tomato is full of lycopene, which is an antioxidant. It helps to fight free radicals in your body that can cause cancer. Tomatoes are also full of Vitamin A, B, C and other nutritious minerals. A snack that’s good for you and fills you up?! Crazy talk, huh? Not in this case.
1 Tomato sliced up
Slices of quality mozzarella cheese — small slice per tomato
Extra Virgin Organic Cold Pressed Olive oil — a couple drops on each tomato n’ cheese stack
Basil — fresh is best if you have it, but dried isn’t the worst
Himalayan Crystal Salt — just a pinch for added flavor
freshly ground black pepper
