Quinoa Recipe with Avocado, Feta, Spinach, Tomato, and Lemon Dressing

This is a light and summery dish that has a great flavor and utilizes garden fresh produce. It’s also super quick to put together and the lemon dressing mixes deliciously with the quinoa and other flavors.

1/2 cup uncooked organic quinoa rinsed and drained
1 cup water
1 large organic tomato or two small tomatoes
1 cup fresh organic baby spinach chopped
2 Tbsp diced white onion
2 tbsp lemon juice
2 tbsp organic olive oil
1/2 tsp Himalayan sea salt

I was trying to think of inexpensive ways to make my dog’s tummy happy.  Dog treats have gotten so pricey and the ingredients are well, down right nasty at times.  So I experimented on my own and made a tasty little treat that Fido would enjoy.

The Reed’s company has the right idea about soda.  They brew it naturally, with actual herbs and spices.  You won’t find food coloring in any of their sodas.  Or cup-fulls of sugar to enhance the taste.  Or added flavorings.  Or chemicals.  Just pure natural brewed soda.  Imagine that.

Ladies and Gentlemen, allow me to introduce the wine winner of the “Wine of the Week”  from the Santa Rosa Press Democrat.  This award was based upon a blind taste test of 10 other organic red wines.  What also makes this an awesome feat is that this particular wine is the cheapest out of all 10.  Cheap as in less than 10 bucks.  And less than 10 is good people; my money tree in the backyard is not growing those greenbacks like it should!  Another thing I found interesting is that is also won against a Bonterra Cabernet. Braised Beef Pasta with Ricotta and Tomato Basil Sauce

This dish has a light peppery taste with a fresh tomato basil flavor, tender beef chunks, and a hint of red wine. The ricotta adds a deliciously creamy element to the mix.

3 lbs organic grass fed chuck roast
2 Boxes Pomi Chopped Tomatoes (~26 ounces, no salt added)
1 Box Pomi Strained Tomatoes (~26 ounces, no salt added)
1 Can Stewed Tomatoes (12 ounces)
2.5 teaspoons Himalayan Sea Salt
