This is the best beer ever.  EVER.

Thai Inspired Chicken with Summer Vegetables

The most time consuming part of this recipe is slicing the chicken, but it goes pretty quick if you use a sharp knife. This is one of my favorite things to make in the summer because it is light, relatively easy, and surprisingly flavorful. I would have to say it does not smell the best while cooking, but don’t let that deter you.

Organic Peanut Butter Cookies

Peanuts have a bad rap for being high in fat.  This may be true BUT peanuts are also high in protein, Vitamin E and niacin.  And honestly, PB is delicious.  The organic, free of added sugar and salt kind, that is.  Look on the back of PB jar labels and you’ll see.  Don’t you just want good ol’ fashioned peanut butter to be just that; Peanut Butter? Now I know you’re not supposed to pick out your beers based upon cute bottles, BUT it was really cute and I simply couldn’t help myself.  Cute bottle must mean delicious beer, right?  Well…maybe not.  The beer in question was St. Peter’s Organic English Ale.

I wondered why the bottle itself caught my eye.  When I checked out their website it stated that the bottle is replica of a 500ML oval medicine type bottle that dates back to the 1770′s.  Pretty fancy.  Now let’s talk about what you really want to know: what it tastes like!

Juicing my Veggies…Again

Vegetable Juice with Tomatoes, Carrots, Celery, Spinach, Cucumber and Peppers

Man, oh man, I seriously can’t get over my juicer.  I simply love love love creating my own juices.  This one is full of veggies AND it tastes awesome.  This vegetable blend contains Vitamins A, B, C, D, E and K followed by Potassium, Iron, Folic Acid, Antioxidants, Magnesium, Manganese, Phosphorus, you get the point?  Good.  On to the recipe then!

3 Medium carrots
Handful of spinach
2 Celery stalks

I like beer.  And I also like fruit.  So why not put them together?  Well, that’s at least what  the Samuel Smith Brewery thought.  This beer is made with organic wheat and organic barley combined with the tartness of organic cherry juice in this one of a kind fruit ale.
I’ve never had a fruit ale before and man, oh man, was this ever fruity!  My girlfriend and I decided to split it, just in case we didn’t like it, we only had one bottle of it and I wanted to be fair.

Healthy Snack; Tomato and Mozzarella Cheese

I love this little snack.  In Italy it’s known as insalata caprese, and is great just about anytime. It’s quick to make and I love, love, love cheese.  Oh yeah, and tomatoes are good for you too :)   A tomato is full of lycopene, which is an antioxidant.  It helps to fight free radicals in your body that can cause cancer.  Tomatoes are also full of Vitamin A, B, C and other nutritious minerals.   A snack that’s good for you and fills you up?!  Crazy talk, huh?  Not in this case.
